Preparation Method :

  • Combine mince, spring onions, garlic, egg, breadcrumbs, fruit chutney, carrot and thyme in a bowl and mix well.
  • Slice the tops off the peppers and scoop out the seeds.
  • Divide the mince mixture into 8 equal portions and form into cupcake shapes. Place each portion inside a pepper.
  • Preheat oven to 180°C / 350°F.
  • Put the peppers in a greased baking dish and bake for about 20 minutes or until cooked through.
  • Serve with hot creamed corn and cooked 4 jacket potatoes with crispy skin. Serve 2 mini loaves per person.


  • 50 grams dried breadcrumbs
  • 2 tablespoon fruit chutney
  • 750 grams beef mince
  • 1 egg
  • 1 carrot, grated
  • ½ teaspoon dried thyme
  • 3 spring onions, finely chopped
  • 1 clove garlic, crushed
  • 8 small red peppers
