COURGETTE QUICHE

Be amazed with Courgette Quiche which has its tempting and irresistible look! Once you’ve got your first taste on it, you can’t keep coming back for more! So what are you still waiting for, you must give it a try and prepare for it!

Preparation Time :
1 hour

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Roll out the pastry dough on a lightly floured surface and use to line an 8 inch flan dish or flan ring, placed on a baking sheet.
  • Prick the base lightly with a fork, cover with foil, then weigh down with baking beans or rice.
  • Bake in a preheated moderately hot oven for 15 minutes.
  • Remove the beans or rice and the foil; return the flan case to the oven and bake for a further 5 minutes.
  • Meanwhile, make the filling: heat the oil in a frying pan.
  • Add the onions and courgettes and fry- gently for about 10 minutes until lightly browned, stirring occasionally.
  • Remove the onions and courgettes from the pan with a slotted spoon, then place in the flan case.
  • Add salt and pepper to taste to the egg and milk mixture, and then pour into the flan case. Sprinkle with the Parmesan cheese.
  • Bake in a preheated moderately hot oven for 25 to 30 minutes until the filling is set and lightly browned on top.
  • Serve hot or cold.

  • Whole meal pastry made with flour
  • 4 tablespoons cooking oil
  • 4 onions, peeled and sliced
  • 750 grams courgettes, sliced
  • Salt
  • Freshly ground black pepper
  • 4 eggs, beaten with milk
  • 4 tablespoons grated Parmesan cheese
