Preparation Method :

  • The Cheese Sauce: Melt the butter in a saucepan. Remove from heat and stir in flour. Return to low heat and stir gently for about a minute or until smooth.
  • Add milk a little at a time and continue stirring. When well-blended, bring sauce to the boil.
  • Reduce to low heat and add cheese, mustard powder, salt and pepper. Cover and simmer for 3-5 minutes. Set aside.
  • Melt the butter and sauté mushrooms lightly. Mix with ham and stir in cheese sauce. Place a layer of ham and cheese mixture in the base of an ovenproof dish. Cover with sliced potatoes.
  • Repeat layering with ham and cheese mixture and potatoes, ending with potatoes as the final layer.
  • Mix breadcrumbs and grated cheese together. Sprinkle over the top.
  • Bake in the preheated oven at 190°C / 375°F / Gas mark 5 for 20-22 minutes or until top is golden and cheese is bubbling.


  • 250 grams cooked potatoes, sliced
  • 100 grams button mushrooms, wiped and sliced
  • 150 grams cooked ham, minced
  • 2 tablespoon butter
  • 100 grams fresh white breadcrumbs
  • 75 grams, grated cheddar cheese

Cheese Sauce

  • 250 ml milk
  • 2 tablespoon butter
  • 50 grams cheddar cheese, grated
  • 2 tablespoon plain flour
  • ½ teaspoon mustard powder
  • Ground black pepper and salt to taste
