POTATO GRATIN

Preparation Method :

  • Beat the eggs with double cream in a large mixing bowl. Beat in grated Gruyere and Parmesan cheese. Adjust seasoning with salt, pepper and nutmeg.
  • Add sliced potatoes to mixture and mix well to ensure potato slices are evenly coated.
  • Pour potato mixture into a buttered 9 x10 inch gratin dish. Top with grated Gruyere cheese and dot with diced butter.
  • Bake in a preheated oven at 160°C / 325°F / Gas mark 3 for about an hour or until potatoes are tender. Serve immediately.

INGREDIENTS

  • 550 grams potatoes, washed and peeled, slice to ¼ inch thickness
  • 60 grams gruyere cheese, grated
  • 400 ml double cream
  • 50 grams parmesan cheese, grated  
  • 3 eggs, well beaten
  • Ground black pepper and salt to taste
  • A pinch grated nutmeg

Topping

  • 50 grams Gruyere cheese, grated
  • 25 grams Butter, diced
