Preparation Method :

  • Beat butter, essence, sugar and egg in small bowl until smooth. Stir in the sifted flours and coconut.
  • Roll rounded teaspoons of mixture into oval shapes, place on greased oven trays, flatten slightly; roughen with fork.
  • Bake in moderate oven about 10 - 12 minutes or until lightly browned. Cool on wire racks. Sandwich the biscuits with jam and filling.


  • 175 grams butter
  • 1 teaspoon vanilla essence
  • 100 grams brown sugar
  • 1 egg
  • 150 grams self-raising flour
  • 100 grams plain flour
  • 50 grams shredded coconut
  • 50 grams raspberry jam


  • 50 grams butter
  • ½ teaspoon vanilla essence
  • 100 grams icing sugar mixture
  • 2 teaspoons milk
