Preparation Method :

  • The Filling: Mix the lamb with the mushrooms, spring onions, lettuce, tomatoes, olives, dressing, and salt and pepper to taste. Blend well.
  • Cut a slit across the top of each bread, gently open out through the slit to form a pocket.
  • Stuff the pitta pockets equally with the filling and place on a grill rack. Sprinkle the cheese on top.
  • Place under a preheated moderately hot grill and cook for 5 minutes or until the cheese has melted. Serve at once.


  • 4 pitta breads
  • 100 grams haloumi cheese, grated


  • 150 grams tomatoes, skinned, deseeded and chopped
  • 150 grams cooked lamb, finely shredded
  • 75 grams mushrooms, thinly sliced
  • 50 grams ready-made yogurt salad dressing
  • 8-10 black olives, pitted and sliced
  • 1 small bunch of spring onions, chopped
  • 2 lettuce leaves, shredded
  • Salt and pepper, to taste
