Preparation Method :

  • Lemon Cream: Beat butter, rind and sifted icing sugar in small bowl until light and fluffy, beat in juice.
  • Beat butter and sifted icing sugar in small bowl with electric mixer until smooth. Stir in sifted flours.
  • Spoon mixture into piping bag fitted with a large fluted tube. Pipe 3 cm rosettes on greased oven trays.
  • Bake in moderate oven about 10 - 12 minutes or until firm. Cool on wire racks. Sandwich the biscuits with lemon cream.


  • 245 grams butter
  • 50 grams icing sugar mixture
  • 230 grams plain flour cup
  • 75 grams cornflour

  • 75 grams icing sugar mixture  
  • 50 grams butter
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
