Preparation Method :

  • The Tuna Salad: Flake the tuna into a bowl and beat in the mayonnaise until well blended. Stir in the red pepper, lemon rind and salt and pepper to taste.
  • The Tuna Salad Round Sandwiches: Spread the butter over the bread slices.
  • Use a round cutter to cut 2 circles from each slice. slices, Spread the tuna mixture over the circles, then top with the remaining 24 circles, buttered sides down.
  • Neat the edges, then spread very lightly with butter. Roll the buttered edges in the parsley.
  • Stack the sandwiches, then wrap very tightly in plastic wrap and chill until ready to serve. Unwrap and arrange on a plate.


  • 250 grams tuna in olive oil, drained
  • 3 tablespoon mayonnaise
  • 1 large roasted red pepper bottled in oil, rinsed, drained, and finely chopped
  • Finely grated rind of 1 lemon
  • Unsalted butter, softened
  • 20 - 24 thin slices whole-grain bread
  • Salt and pepper, to taste
  • Small bunch fresh parsley, very finely chopped
