Preparation Method :

  • Sift dry ingredients into medium bowl, rub in butter. Press ingredients together to form a soft dough. Knead dough gently on lightly floured surface until smooth.
  • Shortbreads can be cooked in many different ways.
  • Shape mixture into rounds on greased oven trays; mark into wedges, prick lightly with fork. Pinch edges decoratively with floured fingers.
  • Bake in moderately slow oven about 35 minutes or until firm. Cut shortbread where marked; stand 10 minutes before turning onto wire racks to cool.
  • Rub cornflour into design of wooden shortbread mould; shake out excess cornflour. Press about a sixth of the mixture into prepared mould.
  • Cut away excess dough, tap mould on base to release dough onto greased oven tray. Repeat with remaining dough.
  • Bake in moderately slow oven about 25 minutes or until firm. Stand shortbread 5 minutes before lifting onto wire racks to cool.


  • 300 grams plain flour

  • 2 tablespoons rice flour
  • 50 grams icing sugar mixture
