CROWNS ON TOAST

Preparation Time :

Preparation Method :

  • Whisk the egg whites with salt and pepper to taste until soft peaks form. Pile half the egg white on to each slice of toast.
  • Make a hollow in the centre and slip the yolk into the hollow.
  • Place on a baking sheet and cook in a preheated moderate oven (180°C/350°F, Gas Mark 4) for about 10 minutes until browned and the yolk is set.
  • Serve immediately, garnished with parsley.

INGREDIENTS

  • 4 large eggs, separated
  • Salt and freshly ground pepper
  • 4 slices whole meal toast, buttered
  • Parsley sprigs to garnish
