Preparation Method :

  • Using a biscuit cutter, cut a hole in the centre of the slice of bread, large enough to hold the egg.
  • Heat the oil in a non-stick frying pan and cook the mushrooms and tomato, cut-sides down, for 3-4 minutes, until the mushrooms are beginning to brown, Turn the tomato over.
  • Make a space in the middle of the pan and add the bread.
  • Crack the egg open and carefully pour it into the hole in the bread.
  • Reduce the heat and cook slowly until cooked through.
  • Season everything to taste with pepper.
  • Serve the sunshine toast with the mushrooms and tomato alongside.


  • 2 slice granary or whole meal bread
  • 2 tablespoon olive oil
  • 4 mushrooms, sliced
  • 2 tomato, halved
  • 2 small eggs
  • Pepper
