Preparation Method :

  • Pour the liquid off the truffles, shake off the excess liquid from them and cut into strips.
  • Make small holes in the ham with a sharp knife and push the truffle strips into these and then cut square shapes into the rind.
  • Mix the onion, the garlic with the mustard, pepper, honey, sugar, oil, dark beer, caraway seeds and the marjoram.
  • Spread the mixture over the roast, fix it in the grill basket and cook for about 45 - 50 minutes. Baste with the marinade.


  • 250 ml dark beer
  • 500 grams roast ham with rind, washed and dried
  • 1 onion, peeled and diced
  • 2-3 cloves of garlic, peeled and diced
  • 5 teaspoon mustard
  • 50 grams truffles
  • 1½ teaspoon pepper
  • 3 teaspoon honey
  • 2 teaspoon sugar
  • 3 teaspoon Sesame oil
  • 1 pinch caraway seeds
  • 1 teaspoon ground marjoram
  • Mixed garden vegetables and herbs
  • Salt, to taste
