Preparation Method :

  • Cook the goose legs in a pressure cooker with some salt water for about half an hour.
  • Take the goose legs out of the pressure cooker, let them cool down and then dry them.
  • Mix the oil with salt and pepper, spread the mixture over the goose legs. Grill the legs on every side for about 10 - 12 minutes or until the skin turns crispy.
  • Put the vegetables, sesame oil, soy sauce and the coriander leaves onto a large piece of aluminium foil. Fold everything up in the foil and cook on the grill for about 10 minutes.
  • Serve the legs of goose with the grilled vegetables.


  • 2 goose legs, washed
  • 250 grams tinned bamboo shoots, drained, shake off the excess liquid and cut into fine strips
  • 2 tablespoon Sesame oil
  • 6 dried, softened Chinese Morel mushrooms, shake off the excess liquid and cut into fine strips
  • 2-3 cloves of garlic, peeled and diced
  • 3 spring onions, washed, cut into rings
  • 1-2 red chilli, washed, cut into strips
  • 1 tablespoon Sesame oil
  • 2 teaspoon soy sauce
  • ½ bunch of green coriander
  • Pepper and salt, to taste
