Preparation Method :

  • Rub the pieces of meat with the garlic clove.
  • Then sprinkle pepper and ginger over the breast of duck.
  • Mix the sherry with the soy sauce and marinate the pieces of meat in the mixture for about 20 - 30 minutes.
  • Heat the oil and fry the vegetables.
  • Take the breast of duck out of the marinade, shake off the excess liquid and grill together with the slices of pineapple for about 5-7 minutes. Turn frequently while cooking.
  • Add the cornflour and thin down with vinegar and the stock.
  • Bring to the boil and keep it simmering for about 3 - 5 minutes.
  • Add salt and pineapple juice.              
  • Serve together with the breast of duck and the slices of pineapple.


  • 750 grams breast of duck, without bones, washed and dried, cut into ½ cm thick slices
  • 250 ml store- bought meat stock
  • 5 tablespoon soy sauce
  • 100 ml sherry
  • 1 carrot, peeled, cut into strips
  • 1 baby pineapple, washed and peeled and remove the hard core, cut into slices
  • A pinch of Ginger powder
  • 1 onion, peeled, cut into rings
  • 1 stick of leek, washed and cut into strips
  • 100 ml pineapple juice
  • 2 tablespoon Sesame oil
  • 1 tablespoon cornflour
  • 1-2 clove of garlic, peeled
  • 50 ml vinegar
  • Salt and Pepper, to taste
