ROLLED ROAST TURKEY

Preparation Method :

  • Spice the turkey breast with salt, pepper and curry powder.
  • Mix the spring onions with garlic, fennel, olives and herbs together with the egg and the breadcrumbs.
  • Spread the mixture over the turkey breast, leaving a border of 1½ cm. Then roll up the meat and tie it with kitchen twine.
  • Put the rolled roast and cook on the grill for about an hour. Turn frequently, baste with the oil several times and sprinkle with the rosemary.
  • Rest the roast for a while, then carve into slices and serve.

INGREDIENTS

  • 750 grams turkey breast in one whole piece, prepared for a rolled roast, washed and dried
  • 150 grams tomatoes, peeled, deseeded and cut into cubes
  • 50 ml Sesame oil
  • 1 bunch of spring onions, washed and cut into rings
  • 2 cloves of garlic, peeled and pressed finely
  • 1 fennel, washed, discard the hardcore and cut into strips
  • 10-12 black olives, finely chopped
  • Curry powder, to taste
  • 1 bunch of basil
  • 2 sprigs of rosemary, finely chopped
  • 1 egg
  • 25 grams breadcrumbs
  • 1 teaspoon ground rosemary
  • Salt and pepper, to taste
