Preparation Method :

  • Mix the lemon juice with the Worcestershire sauce, Calvados and the spices.
  • Marinate the apple slices and the mussels into the spice mixture for about 30 - 45 minutes.
  • Take the apple slices out of the marinade, shake off the excess liquid and spread herb butter over them.
  • Shake off the excess liquid from the mussels. Cut the slices of bacon in half and wrap each mussel in a slice of bacon.
  • Thread the mussels and the pieces of apple alternately onto skewers and grill for about 5 minutes on each side. Garnish immediately with herbs and serve.


  • 150 grams potted mussels, strain and remove excess liquid
  • 50 ml lemon juice
  • 3 teaspoon Worcestershire sauce
  • 50 ml Calvados
  • 1 pinch of cinnamon
  • 3-4 cloves
  • 1 pinch cardamom powder
  • Pepper and Salt, to taste
  • 2 sour apples, peeled, quartered, cored and cut into thick slices
  • 1 tablespoon herb butter
  • 9 slices of streaky bacon
  • Herbs for garnishing
