Preparation Method :

  • Spice the pork escalopes with salt, pepper and the herbs.
  • Lay out the escalopes on the worktop and place a slice of streaky bacon on each one.
  • Put one sage leaf onto each slice of bacon.
  • Sprinkle with the Parmesan and fold the escalopes together.
  • Thread 2 escalopes onto each skewer, baste olive oil and cook for about 5 - 7 minutes on each side.
  • Serve the saltimbocca garnished with basil and black olives.


  • 750 grams 8 thin escalopes of pork, washed and dried
  • 1 teaspoon dried Italian herbs
  • 8 slices of streaky bacon
  • 8 sage leaves, rinsed and dried
  • 50 grams grated Parmesan cheese
  • 2 tablespoon olive oil
  • Salt and pepper, to taste
  • Basil and black olives for garnishing
