LYON ONIONS

Preparation Method :

  • Fry the onions in the heated oil until they are a light yellow colour.
  • Add the garlic clove and the chervils with sliced lemon, raisins, white wine, vinegar, bay leaf, sugar, salt and peppercorns to the onions. Simmer for about 20-22 minutes.
  • Take out the onions and the lemon slices and put them into a bowl. Let the decoction boil down by half.
  • Pour the decoction over the onions and lemon slices. Let the whole thing cool down, arrange, garnish and serve.

INGREDIENTS

  • 300 grams fresh pearl onions, peeled
  • 100 ml white wine
  • 1 teaspoon brown sugar
  • 6-7 peppercorns
  • 3 teaspoon Sesame oil
  • 1 clove of garlic, peeled and coarsely pressed
  • 1 untreated lemon, sliced
  • 50 grams raisins
  • 1 bunch of chervils, washed, dried and teared
  • 3 teaspoon herb vinegar
  • ½ bay leaf
  • Salt, to taste
