SPICY MUSHROOMS

Preparation Method :

  • Mix the lemon juice with salt and enough water. Wash the mushrooms in the lemon mixture.
  • Fill a large glass with the mushrooms.
  • Put the peppercorns into a saucepan together with the bay leaf, the chilli, the vinegar and the sugar and bring to the boil.
  • Pour the brew onto the mushrooms. Lay the sprig of thyme on top and let the whole thing cool down. Then put a lid on the glass.
  • Leave the mushrooms to soak in the glass at least for 8 - 10 hours. Take them out of the glass, arrange on plates and serve.

INGREDIENTS

  • 500 ml brandy vinegar
  • 250 grams brown mushrooms
  • 50 grams sugar
  • 2 teaspoon peppercorns
  • 1 bay leaf
  • 1 chilli
  • 1 sprig of thyme
  • Juice of 1 lemon
  • Salt, to taste
