Preparation Method :

  • Put the florets into a sufficiently large preserving jar.
  • Distribute the onions, garlic and lemon together with the star anis, chillies and the peppercorns on the cauliflower.
  • Boil the vinegar with 3 cups of water and the sugar, pour it over the cauliflower.
  • Let the whole thing cool down for at least 10 - 12 hours and close the jar.


  • 1 medium size cauliflower, washed, florets cooked and cooled
  • 150 grams sugar
  • 350 ml vinegar
  • 3 onions, peeled and finely chopped
  • 3-4 cloves of garlic, peeled and finely chopped
  • 1 untreated lemon, cut into slices
  • 2 star anis
  • 2-3 dried chillies
  • 1½ tablespoon peppercorns
  • Salt, to taste
