Preparation Method :

  • Place the egg yolks and sugar in a bowl and whisk until creamy. Add the ricotta, coffee and half the liqueur and beat well.
  • Whisk the egg whites until they are stiff. Add a tablespoon to the ricotta mixture and beat in to loosen the mixture. Fold in the remaining whites until completely incorporated.
  • Place a few chocolate-coated coffee beans in the bottom of 6 small coffee cups. Spoon over the cappuccino mixture.
  • Whip the cream and remaining liqueur lightly or fold the liqueur.
  • Spoon over the ricotta mixture to look like frothy milk. Sprinkle the grated chocolate over the 'froth'. Chill for at least 20 - 30 minutes or until ready to serve.


  • 150 ml whipping cream
  • 500 grams ricotta cheese
  • 2 medium eggs, separated
  • 100 grams castor sugar
  • 3 tablespoon very strong black coffee, cooled
  • 2 tablespoon coffee liqueur, such as Tia Maria or Kahlua  
  • Chocolate-covered coffee beans
  • Grated chocolate, to decorate
