Preparation Method :

  • Place the egg yolks and sugar in an electric mixer and blend until smooth and bright yellow.
  • Whip the cream until it forms stiff peaks and fold into the egg yolk mixture.
  • Heat the milk in a small saucepan or in the microwave, until it is just below boiling. Fill each cup halfway with the hot milk.
  • Prepare the espresso and pour 1 serving into each cup.
  • Top each glass with 3 or 4 teaspoons of the egg and cream mixture.
  • Serve Immediately.


  • 2 egg yolks
  • 3 tablespoons sugar 
  • 100 ml sweet cream
  • 400 ml milk
  • 4 servings espresso, short
