This Chilled Cheese Cake can satisfy your hunger for cakes and ice cream. This cold and cheesy cake topped with cherries and angelica will give you complete satisfaction. With this treat, your taste buds will be able to experience the ultimate taste of cold cheese cake and cherries.

Preparation Method :

  • Grease an 8" cake tin with oil.
  • Mix the cottage cheese and cream with the grated cheese cubes.
  • Put the lemon juice, egg yolks and castor sugar in a pan and cook over simmering water, whisking constantly, till thick and foamy. Remove from the heat and continue whisking till cool.
  • Dissolve the gelatin with the water over low heat.
  • Blend together the egg yolk mixture, gelatin and cottage cheese. Leave until thick but not set.
  • Whisk the egg whites till stiff, then fold into the mixture. Turn into the prepared tin and refrigerate.
  • Put the biscuits in a polythene bag and crush into fine crumbs with a rolling pin. Blend the crumbs with the demerara sugar and butter and sprinkle over the cheesecake. Press down lightly. Refrigerate until set.
  • Turn out and top with cherries and angelica.


  • 400 grams cottage cheese, grated fine 
  • 125 ml cream, lightly whipped
  • 2 cheese cubes, grated 
  • Juice of 1 or 2 lemons
  • 3 eggs, separated 
  • 180 grams castor sugar 
  • 20 grams gelatin
  • 5 tablespoon water
  • 12 digestive biscuits
  • 60 grams melted butter
  • 30 grams demerara sugar, powdered
  • Cherries angelica spikes
