Sponge Cheese Cake is a fluffy pastry with a coffee liquor flavour. Cocoa powder and other sweeteners are used to make this cake taste like caramel. You will love this cake especially when it is garnished with whipped cream and nuts on top.

Preparation Method :

  • Bake the cake in a round 10" tin. Cool.
  • Cut the cake into two horizontal layers. Place one layer back into the tin. Mix 2 tbsp Tia Maria with 2 tbsp milk and pour half onto the cake in the tin. Leave the balance for the other half of the cake.
  • Filling:Combine the cheese, sugar and egg and beat with a handheld electric beater until smooth.
  • Sprinkle the gelatin over the water and dissolve over gentle heat. Add the Tia Maria.
  • Add this mixture to the creamed cheese mixture, add the cream and beat until just combined. Pour this over the cake in the tin.
  • Place the reserved cake layer on top and sprinkle with the Tia Maria and milk. Set until firm. Remove from tin and place on a serving plate.
  • Sift together the cocoa powder and icing sugar and dust the top of the gateau. Coat the sides with cream, then press the toasted nuts into it.



  • 1 chocolate sponge cake

  • 2 tablespoon milk


  • 250 grams cream cheese or cottage cheese 
  • 75 grams sugar
  • 1 egg
  • 3 teaspoon gelatin
  • 2 tablespoon water
  • 3 tablespoon Tia Maria (coffee liqueur)
  • 300 grams cream, whipped 


  • 2 teaspoon cocoa powder
  • 2 teaspoon extra icing sugar 
  • 80 grams chopped toasted nuts 
  • 200 grams cream, whipped
