Preparation Method :

  • Combine the melted margarine, biscuit crumbs and sugar.
  • Press the mixture over the base of a 8 inch loose-bottomed cake tin and place in the refrigerator for 20 minutes until firm.
  • Place the cheese in a bowl and mix in the honey, yogurt, lemon rind and juice. Beat until smooth.
  • Sprinkle the gelatine over the water in a small heatproof bowl and leave until spongy.
  • Place the bowl in a pan of hot water and stir until dissolved. Stir into the cheese mixture.
  • Whisk the egg whites until stiff, and then fold lightly into the cheese mixture.
  • Spoon over the biscuit base and chill for 2 to 3 hours until set.
  • Remove the cheesecake from the tin and arrange the strawberries on top.


  • 100 grams margarine, melted
  • 200 grams digestive biscuits, crushed 
  • 50 grams Muscovado sugar 
  • 750 grams curd cheese 
  • 8 tablespoons clear honey 
  • 300 ml plain low-fat yogurt
  • Grated rind and juice of 2 lemon 
  • 30 grams powdered gelatin
  • 6 tablespoons water
  • 6 egg whites 
  • 500 grams strawberries, to decorate
