MINI PECAN COFFEE CAKES

Preparation Method :

  • Preheat the oven to 375°F.
  • Combine the butter and sugar in the bowl of an electric mixer. Mix on medium until smooth.
  • Add one egg at a time while continuing to mix the batter.
  • When the mixture is uniform, lower the mixing speed and add the flour, baking powder, baking soda, salt, and sour cream, and mix on low until smooth and uniform.
  • In a small bowl, mix together all the ingredients for the tilling.
  • Place a spoonful of the batter into each pan and add a teaspoonful of the filling on top of each. Place another laver of batter on top of the filling and continue to layer batter and filling in each pan until it full.
  • Bake for 15 minutes.
  • Remove the pans and allow them to cool slightly.
  • Serve while warm or store for up to 24 hours.

INGREDIENTS

  • 200 grams butter, softened
  • 300 grams sugar 
  • 3 eggs
  • 600 grams flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda 
  • ½ teaspoon salt 
  • 500 ml sour cream

Filling

  • 150 grams packed brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon instant coffee
  • 1 tablespoon coffee-flavored liqueur
  • 100 grams pecans, coarsely chopped
