Preparation Method :

  • Mix the flour, baking powder, margarine, ground almonds, caster sugar, eggs, apple juice and vanilla essence in bowl.
  • Fold in the apple and blackberries and spoon the mixture into a lightly greased and lined 9-inch loose-bottomed cake tin. Sprinkle over the demerara sugar.
  • Preheat the oven to 190°C/375°F/ Gas Mark 5 and bake for about 45 minutes or until golden and firm to the touch.
  • Turn out on to a wire rack and leave to cool.


  • 100 ml apple juice 
  • A few drops of vanilla essence 
  • 150 grams self-raising flour 
  • 2 teaspoons baking powder 
  • 50 grams ground almonds 
  • 70 grams castor sugar 
  • 100 grams blackberries 
  • 75 grams margarine 
  • 2 eggs
  • 1 cooking apple, peeled, cored and chopped 
  • 1 tablespoon demerara sugar
