HAZELNUT SHORTCAKE

If you deeply love eating cakes, then you shouldn’t miss to try hazelnut shortcake. Some says that eating too much cakes is not advisable because of it sugar content. With this shortcake, you can firmly enjoy your food cravings without experiencing any negative health condition.

30 minutes

Preparation Method :

  • Beat the margarine and sugar together until soft. Stir in the flour and ground hazelnuts and mix to a firm dough.
  • Turn on to a floured surface and knead lightly until smooth. Divide in half and roll each piece into a 8 inch round on a baking sheet.
  • Brush one round with egg white and sprinkle with the chopped nuts.
  • Bake both rounds in a preheated moderately hot oven for 10 to 15 minutes. Cut the nut-covered round into 8 sections while still warm. Cool on a wire rack.
  • Place the apples and juice in a pan, cover and cook gently for 15 minutes, stirring occasionally. Add the remaining ingredients and leave to cool.
  • Spread over the hazelnut round and arrange the cut triangles tin top.
  • Serve with plain yogurt. 

INGREDIENTS

Hazelnut pastry

  • 100 grams Muscovado sugar
  • 200 grams whole meal flour
  • 150 grams hazelnuts, ground and roasted egg white for brushing 
  • 2 tablespoon chopped hazelnuts

Filling

  • 750 grams dessert apples, peeled, cored and sliced
  • 4 tablespoons apple juice 
  • 100 grams raisins 
  • 100 grams sultanas 
  • 2 teaspoon ground mixed spice
