Preparation Method :

  • In a large bowl, beat the egg yolks, sugar, honey with the lemon and lime rind.
  • Whisk the egg whites until they form soft peaks, then fold into the mixture, then add in the cornflour and flour.
  • Spoon the mixture into a lightly greased and lined 9-inch loose-bottomed cake tin.
  • Preheat the oven to 190°C/375°F/ Gas Mark 5. Bake for 20 minutes or until firm to the touch.
  • Turn on to a wire rack and allow it to cool.
  • Mix together the icing sugar and lime juice and spread over the cooled cake.


  • 100 grams self-raising flour, sifted 
  • 50 grams icing sugar 
  • 3 eggs, separated
  • 2 tablespoons caster sugar
  • 50 ml runny honey 
  • Grated rind of 1 lemon 
  • 50 grams cornflour, sifted 
  • Grated rind of 1 lime
  • 2 teaspoons lime juice
