MADEIRA CAKE

Madeira Cake is so special but the ingredients are very simple and could be found easily. With some pieces of egg, flour, fresh milk and citrus peel, you can already have this tasty pastry treat. With citrus slices on top, you will be delighted to take some bites.

12 slices

Preparation Time :
45 minutes

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Grease and line a deep 18 cm (7 inch) round cake tin.
  • Cream the butter and sugar with the vanilla essence until pale and fluffy, then gradually beal in the eggs.
  • Sift the two flours together and fold into the creamed mixture, adding a little milk it necessary to give a dropping consistency.
  • Turn into the prepared tin and bake at 180°C (350°F) mark 4 for 20 minutes.
  • Arrange the citron slices across the top of the cake and return it to the oven for a further 40 minutes or until well risen and firm to the touch. Turn out and cool on a wire rack.

  • 175 grams butter
  • 175 grams castor sugar
  • 5 ml  vanilla essence
  • 3 eggs
  • 100 grams plain flour
  • 100 grams self-raising flour
  • 15-30 ml fresh milk
  • 2-3 thin slices of citron peel
