Preparation Method :

  • Cut the peel, cherries and walnuts into small pieces and along with the raisins soak them in the rum for 2 hours or longer.
  • Grease and flour a 9-inch cake tin. Line it with butter paper. Sieve the flour with the baking powder and spice powder twice.
  • Beat the butter with sugar till light and fluffy.
  • Beat in the eggs one at a time by adding 1 tablespoon of flour after each addition, beating all the time.
  • Fold in the rest of the flour. Mix in the prepared fruit and caramel and fold it well with a spatula.
  • Put in the lined tin and bake at 180°C/350°F for 45 - 50 minutes or till done.


  • 50 grams walnuts
  • 25 grams glace cherries
  • 1 teaspoon mixed spice  
  • 100 grams lemon peel
  • 230 grams refined flour
  • 220 grams powdered sugar
  • 125 grams softened unsalted butter
  • 1 teaspoon baking powder
  • 225 grams raisins
  • 100 ml rum
  • Few drops of vanilla essence
  • 4 eggs
  • Caramel colour as required
