Preparation Method :

  • Melt the butter in a saucepan, add the onions and fry gently for 10 minutes until caramelized. Remove from the heat.
  • Place the cheese, eggs, Carnation Milk, nutmeg and pepper in a bowl and whisk lightly until smooth. Stir in the cooked onions and grated cheese.
  • Preheat the oven to 190°C / 375°F/ Gas Mark 5.
  • Roll out the pastry and line a 9 inch round, deep, loose-bottomed, fluted flan tin. Chill for about 15-20 minutes, Blind bake the pastry case for about 10-12 minutes.
  • Pour the onion filling into the pastry case and bake for 30 minutes or until the filling sets. Serve warm.


  • 300 grams shortcrust pastry
  • 400 grams can Carnation Evaporated Milk
  • 250 grams Cheddar cheese, grated
  • 50 grams butter
  • 2 onions, sliced into rings
  • 4 eggs
  • ¼ teaspoon ground nutmeg
  • Black pepper
