Preparation Method :

  • Put the chicken portions in a casserole with the chopped pepper and curry powder. Pour over the stock and add salt and pepper.
  • Cover and cook in a preheated hot oven for 50 minutes.
  • Chop the pineapple rings and banana and add to the casserole. Cook for a further 10 minutes or until the chicken is tender.
  • Garnish the casserole with the orange slices.


  • 250 grams chicken pieces
  • 2 large red pepper, cored, deseeded and chopped
  • 2 teaspoon curry powder
  • 500 ml chicken stock
  • Salt
  • Freshly ground black pepper
  • 8 fresh or canned pineapple rings
  • 2 bananas
  • 2 orange peeled and sliced, to garnish
