CHICKEN BASQUAISE

If you want to cook a special dish, you should try Chicken Basquaise. This makes use of so many ingredients such as ham, sausages, parsley, white wine and many more. You will really enjoy the blended taste of this dish.

Preparation Method :

  • Heat the oil and butter in a flameproof casserole, add the chicken pieces and fry over moderate heat, turning frequently, until golden on all sides.
  • Remove with slotted spoon and set aside.
  • Add the onion to the casserole with the garlic, pepper, tomatoes and salt and pepper to taste.
  • Cook over brisk heat for about 10 minutes, stirring constantly, then add wine and bring to boil.
  • Add chicken, reduce heat, cover and cook gently for 30 to 40 minutes until chicken is tender.
  • Just before the end of cooking time, fry the sausages, and stir-fry the ham. Arrange the chicken and sauce on warmed plates, garnish with ham, sausages and parsley.
  • Serve immediately with plain boiled rice.

INGREDIENTS

  • 4 tablespoons oil 
  • 80 grams butter 
  • 1½ kilograms chicken, cut into 4 pieces
  • 2 onion, peeled and finely chopped
  • 4 cloves garlic, peeled and crushed
  • 2 green pepper, seeded and thinly sliced
  • 4 tomatoes, skinned, chopped and seeded
  • Salt
  • Freshly ground pepper 
  • 200 ml dry white wine

GARNISH

  • 6 to 8 small spicy sausages 
  • 200 grams cooked ham, diced 
  • 2 tablespoon chopped parsley
