Preparation Method :

  • Marinate the chicken with the spice mix. Cover; refrigerate for several hours.
  • Heat ghee and oil in large frying pan; add chicken. Cook until chicken is browned all over.
  • Stir in nuts, then add the water. Cover; cook on low flame for about 10-12 minutes or until chicken is tender.


  • 9 chicken thigh cutlets
  • 75 grams unsalted roasted cashew nuts 
  • 2 tablespoon ghee
  • 1 tablespoon IDHAYAM Mantra peanut oil
  • Salt, to taste
  • 50 ml water

Spice Mix

  • 2 teaspoons ground cardamom
  • ½ teaspoon ground nutmeg
  • 1 small fresh red chilli, chopped finely
  • 2 cloves garlic, crushed 
  • 1 tablespoon grated fresh ginger
  • Salt, to taste
  • 2 tablespoons lemon juice
