Warm Salad of Quail Fillets with Shallot and Runner Beans is an easy to cook yet appetizing dish to prepare. The combination of its ingredients including quail fillets, runner beans, chicken stock, salt, pepper, butter, olive oil, shallots and balsamic vinegar, gives the dish its flavorsome taste.

Preparation Time :
30 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Preheat the oven.
  • Place the shallots in the mini bowls with a little butter and olive oil. Cook for 15 minutes.
  • When the mixture is tender, add the balsamic vinegar, the chicken stock and cook for a further 10 minutes.
  • Cook the beans in boiling water, no more than 4 or 5 minutes and slice them lengthways.
  • Fry the fillets for one minute each side so that they are brown and season to taste.
  • Take 4 mini bowls, divide the beans and the shallots and gravy between them and then add the fillets.
  • Place the mini bowls in the oven for 10 minutes and serve.


  • 6 quail fillets
  • 400 grams runner beans
  • 6 shallots, chopped
  • 200 ml balsamic vinegar
  • 200 ml chicken stock
  • Salt
  • Pepper
  • 50 grams butter
  • 200 ml olive oil
