Preparation Method :

  • Sift the flour and the baking powder into a bowl. Add the powdered sugar, vanilla sugar, and salt.
  • Reserve egg white from the egg for later, and add the rest of the egg to the mixture with the butter.
  • Use the dough hooks on an electric beater to combine the ingredients, starting slowly and increasing to maximum speed, until smooth.
  • Turn the mixture onto a work surface and knead until dough is elastic.
  • Reserve one-third of the dough. Work the cocoa powder, powdered sugar, milk or rum, and the chopped almonds into the rest of the dough.
  • Shape this portion of dough into four rectangles measuring around 12 in, 1½ in wide, and 1.5 cm thick.
  • Roll out the remaining third of the dough into a rectangle about 18x12 in.
  • Cut the rectangle into four strips around 4x12 in, and brush them with the reserved egg white.
  • Place each strip over an almond bar and wrap the strip round the bar. Cover with aluminum foil and refrigerate overnight.
  • Slice the bars into slices around 4 x 12in. Line a cookie sheet with nonstick baking paper and arrange the slices on it.
  • Place the cookie sheet in a preheated 375-400°F/ 190-200°C oven and bake 12-15 minutes.


For the dough

  • 800 grams all-purpose flour 
  • 2 heaping teaspoon baking powder 
  • 275 grams sifted powdered sugar 
  • 1 package vanilla sugar
  • Pinch of salt
  • 1 egg
  • 275 grams softened butter
  • 40 grams cocoa powder
  • 1 tablespoon sifted powdered sugar 
  • 1 tablespoon milk or rum 
  • 200 grams coarsely chopped almonds
