CLASSIC CHOCOLATE CAKE

Preparation Method :

  • To make the mixture: break the chocolate into pieces, melt in a bain-marie or basin over water on a low heat until smooth, and pour into a mixing bowl.
  • Add the butter and beat with the mixer at the highest speed.
  • Gradually add the sugar and beat until stiff. Gradually beat in the eggs and egg yolks at 30-second intervals.
  • Reduce the speed to medium and gradually add the breadcrumbs. Whip the egg whites until stiff and carefully fold into the mixture.
  • Pour into a 12in greased loose-bottomed cake or pie pan and smooth the top. Bake the cake in a preheated 375°F/190°C oven for approximately 45 minutes.
  • Cut the cake base horizontally in half when cold. Cover the bottom half with half of the apricot jam and sandwich the two layers together.
  • Sieve the rest of the jam and smooth it over the whole cake.
  • Break the chocolate into pieces and melt in a bain-marie until smooth.
  • Beat the egg whites and sugar and pour in the melted chocolate. Stir until glossy.
  • Smooth the frosting over the whole cake and leave to set. Dust with powdered sugar before serving.

INGREDIENTS

For the mixture

  • 175 grams softened butter
  • 75 grams sugar 
  • 175 grams baking chocolate 
  • 3 eggs
  • 4 egg yolks 
  • 125 grams fine dry breadcrumbs
  • 3 egg whites
  • 6 tablespoon apricot jam

For the frosting

  • 150 grams plain baking chocolate 
  • 2 egg white 
  • 2 tablespoon sugar 
  • Sifted powdered sugar
