Preparation Method :

  • Preheat the oven. Place a baking sheet in the oven.
  • Put the flour into a bowl and rub in the butter until the mixture resembles fine breadcrumbs.
  • Add enough water to mix to soft but not sticky dough.
  • Roll out just under half the dough on a floured surface and use to line the base of a 9-inch pie plate.
  • Mix together the corn flour, sugar, cinnamon and orange and lemon rinds and toss together with the apples and lemon juice.
  • Pile the mixture into the pastry-lined dish. Dampen the edge of the pastry with water.
  • Roll out the remaining pastry and use to cover the pie. Roll out any trimmings and cut out leaf shapes.
  • Brush these with water and attach them to the pie.
  • Brush the top of the pie with beaten egg white and sprinkle with sugar.
  • Place the pie on the hot baking tray in the oven and cook for about 30-40 minutes until golden brown.


  • 250 grams self-raising flour
  • 100 grams butter
  • Water, for mixing and brushing
  • ½ tablespoon corn flour
  • 50 grams caster sugar
  • ½ teaspoon ground cinnamon
  • Finely grated rind of ½ small orange
  • Finely grated rind of ½ small lemon
  • 4 Granny Smith apples, peeled, cored and sliced
  • 1 teaspoon lemon juice
  • Cream, ice cream or custard, to serve


  • ½ egg white, beaten until frothy
