Preparation Method :

  • Half fill a large saucepan with water and bring it to the boil. Grease a pudding basin thoroughly.
  • Sift the flour and cocoa together into a large bowl and rub in the butter or margarine until the mixture resembles breadcrumbs.
  • Add the mashed bananas and sugar and stir into the mixture. Whisk the egg and milk together add it to the sponge mixture and mix thoroughly. Finally, stir in the chocolate pieces.
  • Spoon the mixture into the basin and level the surface. Cover with double thickness foil, make a pleat in the middle.
  • Tie with string and make a string handle for lifting. Place in the saucepan and steam for about 2 hours, topping up the water as necessary.
  • Just before the end of cooking time, place the white chocolate and cream in a bowl and place it over a saucepan of barely simmering water until the chocolate has melted into the cream.
  • Remove it from the heat and stir it until it is smooth.
  • Loosen the sides of the pudding and invert it on to a flan dish. Pour the white chocolate sauce over the top and serve.


  • 50 grams plain chocolate, broken into pieces
  • 75 grams caster sugar
  • 75 ml milk 
  • 150 grams self-raising flour
  • 2 tablespoon cocoa powder
  • 75 grams butter or margarine
  • 2 large ripe bananas, mashed
  • 1 large egg

For the sauce

  • 150 ml double cream
  • 150 grams white chocolate, broken into pieces
