APRICOT WHIP

Apricot Whip is such a wonderful and healthy dish that you must further add on the table! It can get the approval of many people because of its good taste and enticing look! Once you’ve followed the instructions in preparing for it, you’ll make it through an irresistible Apricot Whip!

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Place the apricots in a pan with the water in which they were soaked. Bring to the boil and simmer for 20 minutes until soft.
  • Sieve, or work in a blender with a little of the cooking liquid until smooth. Leave to cool, then stir in the yogurt.
  • Whisk the egg whites until stiff, then whisk in the sugar a little at a time. Fold into the apricot mixture and spoon into glasses.
  • Sprinkle with the almonds and chill until required.

INGREDIENTS

  • 500 grams dried apricots, soaked overnight 
  • 500 grams plain low-fat yogurt
  • 4 egg whites 
  • 4 tablespoons Muscovado sugar 
  • 2 tablespoon flaked almonds, toasted
