AVOCADO AND CHILLI DIP

Preparation Time :
10 minutes

Preparation Method :

  • Place the chilli under a hot grill for 5-7 minutes, turning frequently or until the skin blisters and blackens.
  • Remove the skin and seeds and chop the flesh roughly.
  • Mix the chopped avocados with the lime juice to prevent discoloration.
  • Blend the avocado with the chilli and remaining ingredients until smooth.
  • Season to taste, adding more lime juice and pour into a serving bowl. Garnish with sprigs of herbs.

INGREDIENTS

  • 150 grams ripe avocados, peeled and roughly chopped
  • 100 grams ricotta cheese
  • 25 grams finely chopped mixed herbs
  • 3 teaspoons lime juice
  • 2 teaspoons green peppercorns, crushed
  • Grated zest of 1 lime
  • 1 fresh green chilli
  • 1 garlic clove, crushed
  • ¼ teaspoons salt
  • Herb sprigs, to garnish
