Preparation Method :

  • Place whole garlic bulb on oven tray, bake, uncovered, in moderately hot oven 50 minutes.
  • Cool 10 minutes, cut in half, carefully squeeze out garlic.
  • Boil, steam potatoes until tender; drain.
  • Beat garlic and warm potatoes in medium bowl with electric mixer until combined.
  • Add oil gradually in a thin stream while motor is operating, then add vinegar and thyme, beat until smooth; stir in stock.
  • Serve with prawns or vegetable crudites, if desired.



  • 70 grams Bulb Garlic
  • 400 grams Old Potatoes, peeled, quartered
  • 150 ml extra Sesame oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon chopped fresh thyme
  • 60 ml chicken stock
