Preparation Method :

  • Heat the butter with the oil and glaze the shallots in it. Spice with salt, sugar and pepper.
  • Mix the orange marmelade together with the liquor and orange juice and quench the shallots with the mixture. Simmer for about 15-20 minutes while covered.
  • Cook, uncovered for about 5-7 minutes. Fold the raisins together with the pine nuts into the dip.
  • Fold the lemon balm into the dip, arrange and serve.


  • 250 grams shallots, peeled and diced
  • 150 ml orange juice
  • 2 tablespoon butter
  • 3 teaspoon cooking oil
  • 2 tablespoon raisins, washed and drained
  • 3 teaspoon orange marmelade
  • 2 tablespoon orange liquor
  • 2 tablespoon pine nuts
  • Pepper, Salt and sugar, to taste
  • 1 bunch of lemon balm, washed, dried and cut into fine strips
