Preparation Method :

  • Tip the tomatoes into a small saucepan, cover and cook over a medium heat for about 3 - 5 minutes in their own juice until soft. Set aside.
  • Heat the oil in a heavy-based saucepan over a medium heat and saute the garlic and onion for 3-5 minutes or until soft and translucent.
  • Add the green chillies, salt, sugar and lemon juice, stir well to combine. Remove from the heat.
  • Process the tomatoes, cumin powder and the onion mixture in a food processor to a smooth puree.
  • Serve with starters.


  • 400 grams ripe tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 tablespoons cooking oil
  • 3 - 4 garlic cloves, roughly chopped
  • 2 - 3 green chillies, deseeded and finely chopped
  • Salt to taste
  • 2 teaspoons sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon cumin seeds, dry roasted and ground
