Preparation Method :

  • Heat the oil and fry the onion until soft. Add the spinach and fry until wilted. Drain any excess liquid.
  • Preheat the oven to 220°C/425°F/ Gas 7. Brush the pizza base with half the remaining oil.
  • Spread the pizza sauce evenly over the base, using the back of a spoon, then top with the spinach mixture. Sprinkle over a little freshly grated nutmeg.
  • Thinly slice the mozzarella and arrange over the spinach. Drizzle over the remaining oil. Bake for 10 minutes, then remove from the oven.
  • Make a small well in the centre of the pizza topping and carefully break the egg into the hole.
  • Sprinkle over the grated Gruyere cheese and return to the oven for a further 5-10 minutes until crisp and golden. Serve immediately.


  • 5 tablespoon sesame oil
  • 2 small red onion, thinly sliced
  • 250 grams fresh spinach, stalks removed
  • 2 pizza base
  • 2 small jar pizza sauce
  • Freshly grated nutmeg
  • 250 grams mozzarella cheese
  • 2 eggs
  • 50 grams Gruyere cheese, grated
