If in case you plan to prepare an exciting dish for you family, an egg and vegetable fry is good to have. You can have it prepared every morning. Choosing this dish is good as it includes healthful ingredients such as parsley, egg and vegetables.

Preparation Method :

  • Place the aubergine (eggplant) slices in a single layer on a plate, sprinkle with salt and leave for 20 minutes.
  • Meanwhile, heat 1 tablespoon oil in a heavy-based pan, add the tomatoes, garlic, bouquet garni and salt and pepper to taste.
  • Cover the pan and cook gently for 10 minutes, crushing the tomatoes from time to time with a wooden spoon to break them up. Rub through a fine strainer (preferably not metal), return to the rinsed-out pan and keep hot.
  • Rinse the aubergines and dry on absorbent paper towels. Heat 2 tablespoons oil in a frying pan (skillet), add the aubergines and fry until golden on both sides.
  • Remove with a slotted spoon and arrange on two warmed plates. Add remaining oil to the pan and fry the eggs to your liking. Add the strips of ham and heat through.
  • To serve, place the eggs on the aubergine slices, then top with the strips of ham and tomato sauce.
  • Garnish with parsley and serve immediately.


  • 2 medium aubergine, peeled and cut in thin slices

  • 8 tablespoons IDHAYAM Sesame oil    
  • 4 large ripe tomatoes, quartered
  • 2 clove garlic, peeled and crushed    
  • 2 bouquet garni    
  • Freshly ground pepper    
  • 8 eggs    
  • 200 gram ham, cut in thick strips
  • Chopped parsley, for garnish
