FRUIT FILLED SOUFFLE OMELETTE

Preparation Method :

  • Cut the strawberries in half and place in a bowl. Pour over the liqueur and set aside to marinate.
  • Beat the egg yolks and sugar together until pale and fluffy, then fold in the whipped cream and vanilla essence.
  • Whisk the egg whites in a very large, grease-free bowl until stiff, then carefully fold in the yolks.
  • Melt the butter in an omelette pan. When sizzling, pour in the egg mixture and cook until set underneath, shaking occasionally.
  • Spoon on the strawberries and liqueur and, tilting the pan, slide the omelette so that it folds over.
  • Carefully slide the omelette on to a warm serving plate, spoon over the remaining liqueur, and serve dredged with icing sugar.
  • Cut the omelette in half, transfer to two warmed plates and eat immediately. 

INGREDIENTS

  • 100 grams strawberries, hulled
  • 6 tablespoon kirsch, brandy or Cointreau
  • 5 eggs, separated
  • 3 tablespoon caster sugar
  • 5 tablespoon double cream, whipped
  • A few drops of vanilla essence
  • 3 tablespoon butter
  • Icing sugar, sifted
