Preparation Method :

  • Peel, boil and mash the potato, add a little salt to taste and set aside.
  • Heat the oil in a thick deep frying pan and fry the onion until soft golden brown.
  • Lower the heat, add garlic, salt, chilli powder, green chillies, fresh coriander, mushrooms and tomato and fry everything together. Gradually add the mashed potato.
  • Beat the eggs lightly and pour over the vegetable mixture. Let the eggs cook slowly for about 3 minutes.
  • Turn the mixture very gently and cook the other side for another 2 minutes . This is delicious served with mango chutney.


  • 1 medium potato 
  • 3 tablespoons IDHAYAM peanut oil
  • 1 medium onion, peeled and sliced 
  • 1 clove garlic, crushed 
  • ½ teaspoon salt 
  • 1 teaspoon chilli powder
  • 2 green chillies, chopped, deseeded if desired 
  • 2 tablespoons chopped fresh coriander 
  • 6 button mushrooms, halved 
  • 1 medium tomato, chopped 
  • 4 medium eggs
