Preparation Method :

  • Melt the butter in a pan and sauté the onion, mushrooms, red pepper, garlic and tomatoes for 5 to 10 minutes or until soft. Remove with a slotted spoon and reserve.
  • Beat the eggs with the water, herbs and salt and pepper to taste. Heat the oil in an omelette pan and pour in the egg mixture.
  • Cook over a medium heat for 1 minute or until the mixture is set on the bottom.
  • Spoon the vegetables over the omelette and continue to cook for 1 to 2 minutes, then sprinkle with Parmesan cheese and place under preheated grill (broiler) for 4 minutes.
  • Cut into two and serve immediately.


  • 30 grams butter
  • 2 onion, chopped
  • 100 grams mushrooms, sliced
  • 2 small red pepper, cored, seeded and chopped
  • 2 clove garlic, crushed
  • 4 tomatoes, skinned and chopped
  • 6 eggs
  • 4 teaspoons water
  • 2 teaspoon dried mixed herbs
  • Salt and freshly ground pepper
  • 4 teaspoons IDHAYAM Sesame oil
  • 50 grams grated Parmesan cheese
